Green Peas Spread

A light and creamy green peas spread made with sunflower seed butter, fresh basil, lemon, and garlic. Perfect as a dip, spread, or sauce.

Ingredients
  

  • 1 1/2 cup (160g) frozen or fresh green peas
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp ground cumin
  • 1 clove garlic
  • 1/4 tsp ground chili
  • 1 tbsp olive oil extra virgin
  • 2 tbsp sunflower butter heaping tablespoons
  • fresh basil leaves (to taste)
  • 2 tbsp lemon juice
  • 2 tbsp iced water (plus more if needed)

Step 1: Cook the peas

  • Cook the green peas in boiling water until softened, about 5 minutes. Drain well and let cool slightly.

Step 2: Blend the base

  • In a blender, combine the cooked peas, salt, black pepper, cumin, sliced garlic, chili, olive oil, sunflower butter, fresh basil leaves, and lemon juice.

Step 3: Check consistency

  • Blend the mixture until mostly smooth. Check the consistency—it may be thick at this stage.

Step 4: Adjust with water

  • Add iced water and blend again until smooth and creamy. If needed, add more water a little at a time to reach your desired texture.

Step 5: Store and serve

  • Transfer the spread to a container. Keep refrigerated until ready to serve. Enjoy chilled or at room temperature.
