  • 1 cup (120g) flour
  • 1/2 cup (90g) sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 cup (125ml) milk
  • 1 egg
  • 1/4 cup (60ml) vegetable oil

Step 1: Preheat the oven

  • Preheat your oven to 190°C (375°F) and line a 6-cup muffin tin with paper liners or grease it lightly.

Step 2: Mix the wet ingredients

  • In a medium bowl, beat the egg. Add the oil and milk, and mix until well combined.

Step 3: Mix the dry ingredients

  • In a separate bowl, combine the flour, sugar, salt, and baking powder. Stir until evenly mixed.

Step 4: Add the vanilla

  • Stir the vanilla extract into the wet ingredients.

Step 5: Combine the wet and dry ingredients

  • Pour the wet ingredients into the dry ingredients. Gently mix until just combined—it's okay if the batter is a little lumpy. Avoid overmixing to keep the muffins light and fluffy.

Step 6: Fill the muffin pan

  • Spoon the batter into a prepared 6-cup muffin pan lined with muffin liners or lightly greased. Fill each cup about 3/4 full.

Step 7: Add toppings (optional)

  • If desired, sprinkle light brown sugar or add your favorite toppings to the batter.

Step 8: Bake the muffins

  • Bake at 190°C (375°F) for approximately 18 minutes, or until a toothpick inserted into the center comes out clean.

Step 9: Cool the muffins

  • Carefully remove the muffins from the pan and transfer them to a wire rack to cool completely before serving.
