Ingredients
  

  • 1 cup (120g) flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup (90g) sugar
  • 1 egg
  • 1/4 cup (60ml) oil
  • 1/4 cup (60ml) milk
  • 1/4 cup (60ml) Greek yogurt
  • 1/2 tsp vanilla extract

Step 1: Preheat the oven

  • Preheat your oven to 350°F (180°C). Line a 6-cup muffin pan with paper liners or lightly grease it.

Step 2: Mix the dry ingredients

  • In a large bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.

Step 3: Mix the wet ingredients

  • In a separate bowl, whisk the egg, oil, milk, Greek yogurt, and vanilla until smooth.

Step 4: Combine wet and dry ingredients

  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined—don’t overmix.

Step 5: Fill the muffin pan

  • Divide the batter evenly between the muffin cups. If desired, sprinkle the tops with brown sugar.

Step 6: Bake

  • Bake for about 18 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Cool

  • Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
